Fried Egg Noodles


The One Only Restaurant, 351 Springvale Road, Springvale, Victoria

Ingredients for (1 person)
Fried Egg Noodles:

  • 4 slices Chinese roast pork (Cha Siu) cut in halves

  • 4 bite size pieces cooked chicken meat cut in halves

  • 10 small cooked prawns

  • 1/4 red capsicum sliced

  • 1/2 shallot (spring onion) cut into 1 cm pieces

  • 1 handful bean sprouts

  • 100 grams dried egg noodles

  • 1/4 teaspoon salt

  • 1/2 teaspoon sugar

  • 2 teaspoons mushroom soy sauce

Method:
  1. Boil the egg noodles for about four minutes until soft but still firm. Wash in cold water and drain until all the water is gone. Put aside.
  2. Heat wok or other suitable heavy bottom cooking pan. Put one tablespoon of vegetable oil and fry the capsicum pieces until cooked. Put in the roast pork, chicken pieces,  small prawns and spring onions. Fry for 30 seconds, then put in the egg noodles and stir fry until heated through. Season with the salt, sugar and mushroom soy sauce.
  3. Put in the bean sprouts and mix well together. Stir fry for one minute.
  4. Serve hot with chilli sauce.
